The kk board set up is what makes it flip,stick scaling was over 100. V-tails dont gain better acro ability from the slanted motors but gain better yaw response and control for turning. A v-tail quad is in between a quad and a tricopter feel wise in the air,still has lots of power like a quad but turns and feels similar to a tricopter in yaw control.
They will draw more current than the values shown on the motor page, but they will work and you will get more thrust going from a 3.8 to 4.5 pitch. Just have to make sure you don't exceed the max motor current, but just changing the pitch and staying with an 8" prop shouldn't do this.
