I have one of these 2S1P(N460.2S.25) to take apart, which should work well. I bought some pre-wired JST connectors from HK for the purpose. I tried the single cell 600mah ones sold here, but the results were slightly disappointing, as they were fairly heavy and didn't survive more than about 50 cycles. the prewired connectors were extremely high quality (designed for discharge, nice fat high strand count wires) and a very modest cost.
