I have to connect a brushless motor with three unmarked leads to an electronic speed control which has three unmarked leads. The leads appear to be laid out in an orderly row on both the motor and the ESC. Do I just connect them the way they lie?

Connect them any way you want. If the motor runs backward, just swap any  two leads to change direction.

unless its a sensored motor and esc, then the wires will be labelled :)

2 motors on 1 ESC and 1 battery? I would not recommend that. The ESC uses back electromotive force from the motor do determine it's position, in case there are two motors connected to one ESC, the ESC does not know from which motor it receives the back EMF and one motor will run out of phase.

2 motors on 2 ESC's and 1 battery is possible, you will have to make a parallel connection to the battery, connect both ESC positives and both negatives to each other in one connector and than to the battery.
