Have a look at TomHe's site http://rc.tomhe.net/. A few good little parkjets and an aerobatic plane (Su-31)
All are very simple profile type plans but they fly ridiculously well.
For more realistic complex builds look at www.parkjets.com

   I just built the vto, its a simple saucer style aerobatic plane. 2 main pieces, fuse and wing.
